Obtained by water bath distillation in a discontinuous still from both red and white pomace, it matures in small barrels of cherry, ash, oak, and locust, each imparting its own characteristics of fragrance, aroma, colour, and flavour. The ageing time follows the rhythms of nature, with 18 months passing from moon to moon.

The long ageing (at least 10 years) in French oak barriques, medium toast, gives the grappa its typical amber colour and an intense aroma reminiscent of dried fruit, oriental spices, leather and cocoa, with a full and enveloping flavour on the palate, dry taste with a delicate vanilla aftertaste

Produced in limited quantities, by distilling fine grape pomace in copper stills using the "Tullio Zadra" method, it is aged for over 15 years in French oak barriques, medium toast, a maturation lasting more than 15 years in French oak barriques, medium toast, a maturation lasting more than three decades that gives the grappa an intense amber colour with golden hues. On the nose it is rich and intense: spicy notes of dried fruit, pepper, cinnamon and tobacco. Decisive, dry taste with a pleasant vanilla aftertaste.
