Castel del Monte D.O.C.
It was the first Chardonnay produced in Puglia and perhaps in the entire Southern Italy.
It testifies to the happy result of adapting Chardonnay to the Mediterranean climate of the limestone hills of the DOC Castel del Monte area. The grapes are harvested in the second decade of August and vinified at controlled temperature. The contact with the yeasts for a few months in cement tanks allows for a wine with a pronounced personality, typical of the variety, and a great balance between complexity and freshness that pairs well with even elaborate fish dishes.

Cantina Paolo Leo, a family with a long winemaking tradition, has always infused its passion into the native Apulian wines and, specifically, those from Salento. At the same time, it has committed to experimentation, planting exotic varieties of international significance in the warm soils between the Ionian and Adriatic seas.
The Pinot Grigio Puglia IGP from the Paolo Leo estate originates from the Salento vineyards in the province of Taranto.
The Pinot Grigio grape, of Italian origin, is one of the most fashionable wines, especially in America and the United Kingdom. The skin of the grape is coloured, ranging from pale pink to more intense shades, so that if the must is kept in contact with it for an extended period, it is possible to obtain a rosé wine.
The grapes, cultivated using the trellis and Guyot systems, are harvested in the early hours of the morning, crushed, and pressed with soft presses. Afterwards, the must ferments with selected yeasts for 10 days at a constant temperature of 15°C and is finally aged for 3 months in steel and for one month in bottle.
The Pinot Grigio Puglia IGP is a wine with a bright straw-yellow colour, a gently fruity aroma of banana and green apple, and a light, pleasant taste, well balanced in acidity and softness.

The Castel del Monte Bombino Bianco DOCG Marese Rivera is born from Maresa's precise intention to express the characteristics of pure Bombino Bianco with character.
It is made from late-ripening grapes, gently pressed, and has a short resting period on the lees.
The result in the glass is a splendid wine with a straw-yellow colour and greenish reflections, with an intense and fruity aroma featuring notes of renetta apple, which on the palate is full, fresh, and fruity, well balanced by a pleasant acidic note.
A pleasant and fresh wine that pairs well with raw and cooked seafood appetizers, fish-based dishes, and light soups.

Valle d’Itria Bianco Verdeca IGT
History of the grape variety: Less known than other native varieties from Puglia, Verdeca is an interesting grape, capable of producing wines of great pleasantness and aromatic richness. A grape that is often enhanced through careful vinification, with low fermentation temperatures and aging in steel. The result, as in the case of this Valle d’Itria Igt proposed by Terrecarsiche 1939,
Vinification: Puglian bush training system, harvest period late September. Fermentation in steel at controlled temperature for 10/15 days.
Verdeca IGT Puglia
CLASSIFICATION: I.G.T. Puglia.
GRAPES: Verdeca.
PRODUCTION AREA: Alberobello (Ba).
TRAINING SYSTEM: Pruned trellis cordon and bush vineyards (5,000 vines per ha).
HARVEST TIME: Second half of September.
VINIFICATION: The grapes are destemmed and, without being pressed, are cooled to about 8°C. At this temperature, they rest for a few hours to increase the extraction of primary aromas. The must obtained from soft pressing decants cold to allow for natural clarification. Alcoholic fermentation takes place in stainless steel tanks at 14°C.
AGING: In stainless steel tank until bottling.
AGING POTENTIAL: A wine that expresses its best when consumed young but, thanks to good acidity, manages to maintain its freshness for up to two years.
COLOUR: Straw yellow with delicate greenish reflections.
NOSE: Intense and persistent. Fruity with distinct notes of quince. Floral with elderflower and peach blossoms. Characteristic balsamic retro-nose with rosemary and sage.
PALATE: Intense with a clear sensation of freshness and a light aromatic note. Enchanting and very persistent aftertaste, with good complexity in the retro-nasal olfaction.
PAIRING: Fish cuisine, fresh and light cheeses. Delicate first courses with aromatic or spicy components.
SERVE AT: 11° C.

The white "Passaturi" is part of the Valle d'Itria line, a production area for this pure Minutolo from vineyards located at an altitude of 400/450 m. A historic grape variety, evocative with scents of flowers and yellow fruits.

Intense straw-yellow colour with golden reflections. On the nose, floral notes, orange blossom and magnolia. Ripe yellow-fleshed fruit, apricot, peaches, hints of citrus and aromatic herbs. The taste is rich, soft with a savoury finish.
