The Vermentino and Petit Manseng ferment and mature in stainless steel for around 12 months. The wine is then aged for 3/4 months in bottle. The wine is straw-coloured with golden highlights; the aroma is intense and persistent, with a floral bouquet and exotic fruit, with a slight balsamic and almond note. On the palate it is full, velvety and harmonious, with a very long flavour and aroma persistence.

Wine made from Trebbiano grapes only, which are spontaneously fermented in stainless steel tanks. The must is left in contact with the skins until the cap of grape skins rises. The tank is then racked off and only the free-run must completes the alcoholic fermentation, which now continues in Hungarian tonneaux. The wine remains on its own lees with bâtonnage for about a year, during which malolactic fermentation also takes place. Subsequently, the wine rests in tank for about three months before being bottled. 12% vol. It has a golden yellow colour. On the nose it is intense and persistent, with strong balsamic notes, wild flowers, hints of almond, saffron, spicy and very mineral. On the palate it is fresh, savoury, full-bodied, with a long finish; it can be paired without hesitation with fusion dishes of Asian influence.
DIFFINDENTE - DOC Vermentino di Sardegna Wine

Vinification: Cooling of the harvested grapes using a refrigerated cell. Loading into the press of whole bunches not destemmed, gentle pressing in the complete absence of oxygen. Subsequent fermentation at a controlled temperature of 13°C.
Maturation: 3 months in stainless steel on the fine lees at a controlled temperature and one month of bottle ageing.
Colour: Straw yellow with greenish highlights.
Aroma: Fine and delicate. Notes of white flowers alternate with intriguing hints of ripe white-fleshed fruit and iodine.
Taste: Fresh, savoury, with excellent aromatic and flavour persistence. A versatile wine, smooth and satisfying to drink.
