Made with fine Trinitario cocoa that we select in Madagascar. The cocoa is mostly grown in the north-west part of the country, particularly in the Sambirano valley, the river that flows near the small town of Ambanja. Due to the proximity of the Tsaratanana mountain range and thanks to the trade winds, the region benefits from a unique microclimate. During the rainy season, the river floods the areas surrounding its banks, making them extremely fertile and creating ideal conditions for many types of crops, particularly cocoa. The chocolate produced captures the aromas of Madagascar, famous for its fine cocoa, which is reflected in the intense notes of red fruits, such as raspberries and red berries, as well as apricots and pink grapefruit. Brave Beans LADY MARMALADE

The cocoa we have chosen grows on the hills surrounding Chililique and enjoys very favourable climatic conditions. The farmers live and work in a community located in the district of the city of Chulucanas, the capital of the province of Morropòn, in the department of Piura, in northern Peru. The members of the cooperatives cultivate native white cocoa over a total area of 430 hectares across the coastal, mountainous, and forested areas of the Piura region. Here, a selection is made to deliver the fresh beans to the collection centre, where they are optimally fermented and then sun-dried.
Fifty percent of the members are women, who with commitment and dedication produce one of the most famous and rare cocoas in the world: Piura Albino. Thanks to this collaboration with producers to promote the wonderful cocoa beans, not only is the local economy supported, but also gender equality.
The resulting chocolate is an explosion of cooked red fruit, notes of very ripe figs and raisins, citrus such as lime and lemon, with a final note of marasca. CITRUS!

Brave Beans KILIMANGERÒ

Chocolate made with organic Trinitario cocoa from Tanzania, from the Kilombero Valley, located near the enchanting Udzungwa Mountain National Park. In this rural area, Brian Lo Bue and Simran Bindra decided in 2012 to create a community of farmers dedicated to cultivating quality cocoa. This is how they settled in Mbingu (Paradise in Kiswahili) and soon the community grew to include 2000 farming families, who primarily live off the income from small cocoa plots. Among the farmers are the Mbingu Sisters: a convent in the village that manages a 30-hectare cocoa plantation. The income from this plantation helps fund many charitable activities run by the sisters, including a hospital, a school, and an orphanage.
The chocolate we obtain from these beans has a particularly intense flavour, with a clear note of balsamic vinegar, followed by a bouquet of tropical yellow fruits, such as passion fruit and mango, with hints of molasses and dried fruit on the finish. DELICIOUS!

This is a cocoa that grows in the north-eastern coastal region of Ecuador overlooking the Pacific Ocean: it is here that ancient native cacao trees of the highly prized Nacional genetics, considered one of the best in the world, can be found. In the same area, but this time in the Esmeraldas region, trees of Criollo genetics are also mixed among the plantations, which is why this cocoa is also called Nacional Acriollado. Notes of honey, white flowers, liquorice, muscovado sugar, butter, vanilla, and delicate hints of citrus are the aromatic profile of the Nacional Acriollado cocoa, which is cultivated, harvested, fermented, and dried by cooperatives of local farming families, appropriately trained to manage the entire supply chain and promote sustainable agriculture, proper social inclusion, and ethical sourcing of raw materials.
The chocolate obtained has notes of dried fruit, butter, black olive, liquorice, white flowers, and vanilla. IRRESISTIBLE!

Brave Beans PLATA O PLOMO

This Colombian cocoa grows in the Sierra Nevada, nestled between the slopes of the snow-capped peaks of Santa Marta, the highest coastal mountain range in the world, and the Caribbean Sea.
The cocoa we use is cultivated by 13 families associated in a cooperative that pursues agroforestry biodiversity as an alternative to the degenerative monoculture of bananas, prevalent in this part of the country.
The level of expertise in cocoa cultivation and fermentation among local farmers is truly exceptional: they are aware that by learning the correct practices, they can obtain higher quality cocoa and, consequently, a greater income.
Over the years, their cocoa has won several awards, including the coveted Golden Bean Award in 2019.
We obtain chocolate with notes of toasted almond, cream, butter, and a slight bitterness that enhances spices like nutmeg, complemented by hints of tropical fruit such as pineapple. DISRUPTIVE!

When it comes to Brazilian cocoa, it is essential to mention Bahia, aptly named Costa Do Cacau. The cocoa beans we use grow right in the heart of the Atlantic Forest, in the Bahia region, one of the top five places in the world for biodiversity and richness of endemic species. It is this lush vegetation, along with the climatic characteristics of the area, that creates unique environmental conditions. In 2009, Åkesson’s acquired the historic Fazenda Sempre Firme, reorganising its social structure and thereby significantly improving the living conditions of the farmers and their families, who passionately work the one hundred and twenty hectares of land. The best reward for Bertil is hearing the community refer to the Fazenda as “paraiso” (paradise).
In this special place, a traditional and surprising variety of cocoa called “Parasinho” grows, which has marked the success of Bahia.
The resulting chocolate has notes of tobacco, walnut husk, red fruit, roses, but also winey notes with wood and vegetables, ultimately providing a pleasant astringency. WONDERFUL!
