Geuze Mariage Parfait is one of the purest and most refined examples of spontaneous fermentation Lambic beer. To limit its bitterness, the Boon brewery produces the lambic only in the cold months, from October to April. It is made up of 40% unmalted wheat and 60% malted barley, aged hops, and wild yeasts collected from our open fermenters, aged for at least three years in oak barrels.

Grand Cru Bruocsella can be considered the missing link between beer and wine. It is a complex beer, a blend of Lambic aged for three years in oak barrels, which do not undergo secondary fermentation in the bottle; indeed, Grand Cru Bruocsella is characterised by almost no carbonation. With a golden colour and amber reflections, it is intense and sharp, with seductive and tangy fruity notes (apple) and slight hints of honey.

Spontaneously fermented beer made with wheat and malted barley from organic farming.
As tradition dictates, it is the result of blending Lambic from different vintages.
It presents a deep golden colour, with sharp and intense aromas and flavours, as the style requires. The aroma and taste are characterised by sour and fruity notes, with hints of wood, leather, and cellar in the background. On the palate, the drink is enveloping and marked by astringent and sour notes.

The uniqueness of this lambic is the addition of Moscato grapes after the first 18 months of maturation, after which it is allowed to mature for another 6 months, at the end of which a portion of lambic that has been aged for a year is added.

Beer produced with various blends of Lambic and the addition of fresh raspberries. With a bright red colour and amber reflections, the sour, fresh, and tangy notes of raspberries are the stars of the aromas. Both on the nose and on the palate, sour and winey notes of red fruits and Lambic dominate, giving this beer its typical and fascinating funky profile.
On the palate, the drink is long, dry, and astringent.

Cantillon SAINT LAMVINUS Lambic with Merlot Grapes Alc. 5%

From the collaboration between Cantillon, Saint-Emilion and Pomerol (famous wine cellars), the Saint Lamvinus is born.
Produced using Cabernet and Merlot grapes, it is aged in barrels that previously contained Bordeaux wine.
It presents an intense purple colour, with a winey and fruity flavour.

La Natur-Elle Organic Geuze is made with a blend of different Lambic (1, 2 and 3 years) obtained using raw materials sourced exclusively from organic farming. Fresh nose with aromas of leather, apple cider, cellar, yard, stable, farm, sour citrus (lemon), wheat, yeast, fruit (white grape and green apple), earthy, herbal and mouldy notes. Medium body, slightly lively carbonation. On the palate, it reveals a good dose of funk along with sour, citrus, woody, tannic, earthy and yeasty tones. Dry finish, moderately acidic with a slight herbal touch from hops. Overall, a solid Geuze with great drinkability, featuring pleasant fruity esters in both aroma and flavour.

On the palate, there is much elegance and balance between a sweeter, rounder malt profile and a pleasant, wine-like acidity that is slightly acetic and very elegant.
