Artisanal Chocolate
Here are the characteristics of our chocolates:
We select the best cocoa beans directly from small producers or their cooperatives to have the rarest raw material, with characteristics different from standard cocoa.
We roast the beans in an almost obsessive manner, to fully develop the aromatic precursors that form during fermentation.
We refine our chocolate using stone at low temperatures to preserve its bouquet of aromas.
Refinement is another important phase to achieve greater aromatic roundness.
Only 2 ingredients: cocoa beans (Cocoa BEANS) and sugar. The cocoa is always dosed at 70% and the recipe remains unchanged to allow for recognition and comparison of the differences between the cocoa used.
