PIZZIC'OSTERIA VOLPETTI BISTROT MENU
My place is neither a restaurant nor a trattoria.
It is a delicatessen with old-fashioned cooking that revives the concept of the original Volpetti shops: doing your daily shopping or eating in a pizzicheria with nineteenth-century heritage.
You can enjoy authentic rustic dishes from the past “Roman” tradition, historically derived from that of the Umbrians, founders of archaic Rome!
The first four Kings of Rome were in fact Umbrian.
Until 1923, Umbria also included the Sabine and Reatine territories (province of Perugia). Mussolini wanted to annex the former to Lazio to prove that the Kings were Latin and not Umbrian.
Following the geographical and political takeover of archaic Rome by the Latins, the Umbrians remained a precious source of food for the Romans, so much so that Pope Boniface IX established the “Pecudum” Customs House in 1402, which granted the safe and exclusive free passage of flocks and merchants from Umbria to Rome.
My family has been documented in Umbria since the 16th century, with a family tree compiled up to the present day by Dr. Luigi Rambotti, Director of the State Archives of Perugia.
The Volpettis, a family of ancient lineage, were granted the heraldic coat of arms of “Distinta Civiltà,” as a “Notable” family, being an eminent representative of their flourishing centuries-old activity in the merchant bourgeoisie in the Duchy of Spoleto, engaged in the trade of leather, truffles, and flocks.
They settled in the capital in 1870 following the opening of the first shop in Campo Marzio, which still exists today and is run by my cousin Gianluca Volpetti.
For these reasons, I present an authentic cuisine in a gastronomic philological journey of rediscovery that stems from Roman tradition and my family history.
The hams, cured meats, wine, oil, sauces, honey, dry and fresh pasta, and many other specialties are produced in-house.
All the products used in my dishes can be purchased on the shelves and at the counter only in the shop in front of Villa Torlonia.
