THE TECHNIQUES
IN THE VINEYARD: we obtain Chamaleontis by controlling the
alcohol content already in the vineyard. Management of the crop
load and zero irrigation limit the accumulation of
sugars. Then the agronomic practices upstream, such as the
selection of the variety (Merlot), the rootstock (not vigorous), the
planting density (high), the soil (clay-limestone), provide the
incipit for the verses that follow, in the vineyard and in the cellar.
IN THE CELLAR: first and foremost, control of fermentation; for this purpose
both the yeasts used and the management
of the transformation of sugars into alcohol are essential.

Rigel aged in amphora (Lazio) Tenuta Petra Potens

Cabernet Franc 14% vol.
Originally, there was no wine without amphorae: in terracotta, wines
were born, matured and transported on ships from
one shore of the sea to the other.
Today, amphora wines are the most modern, for their organoleptic
characteristics and for the vision they express: the amphora
makes it possible to achieve constant micro-oxygenation
without imparting any aromas, preserving the purest flavour
of the wine. Unlike steel, terracotta allows a
constant exchange of oxygen with the outside, ideal for
wines that require long ageing periods. Unlike
wood, the amphora allows the exchange of oxygen
without releasing its own aromas and scents.
Wine aged in amphora brings together past and future, respect for
tradition and a visionary spirit. It is guided by technique,
passion and innovation, on an independent and original path in today's wine world.
For this reason, it is in tune with our way of seeing wine.
Pure Cabernet Franc, with extraordinary aromatic openness
and an authentic flavour note. Full-bodied, with
great persistence and clarity.
