On the palate, the entry is full, warm, with enveloping tannins and a slight astringency that pleasantly cleanses the mouth, with a persistent return of retro-nasal sensations. The vineyards of our .G are located in 3 municipalities: Ozzano, Rosignano, and Treville, each characterized by different pedoclimatic conditions that express a greater complexity and aromatic richness of the wine. At perfect ripeness, the grapes are hand-harvested in small baskets and then selected.

Fermentation occurs thanks to indigenous yeasts in steel tanks with medium macerations of 5 – 7 days, followed by malolactic fermentation.

Vinification
As for all Nebbiolo vineyards, great attention is paid to vineyard cultivation, with strict manual selection of the grapes, both in the vineyard and in the cellar with the conveyor belt onto which the crates of about 18 kg each are emptied; destemming and very gentle crushing with a de-stemmer, alcoholic fermentation and maceration for about 25 days at a controlled temperature of 28°C. This is followed by malolactic fermentation in December.
Ageing
Ageing in 40 hl oak barrels. The ageing period lasts about 24 months; bottling takes place at the end of summer, followed by further bottle ageing before release for a period of six months.

Organoleptic characteristics
The typical character of Barbaresco Gallina is expressed in its elegance, finesse on the nose and palate, and the verticality of its tannic sensations. An expression of a marly soil with a good proportion of very fine sand, it has a ruby red colour with subtle garnet hues. Particular finesse on the nose, balance and complexity, with aromatic notes of ripe red fruit, spices and violet, typical of Nebbiolo. Enveloping tannins, excellent length on the palate.

DESCRIPTION
The Barbera d'Asti Silente bio is the classic Barbera as tradition intends. Its great quality is being "unpretentious", meaning direct, authentic, and if it were a person, it would be a "silent one".

The company "La Luna del Rospo" was founded in 1994. It is located in the province of Asti, in Agliano Terme, an area particularly suited for the production of Barbera d’Asti, bordering to the West with Costigliole d'Asti, to the East with Nizza Monferrato, and to the North with the city of Asti. Its calcareous, clayey soil rich in quartz is known to produce Barberas that elegantly and convincingly combine body, structure, and fruit.

Work in the vineyards is characterised by the utmost respect for every form of life: animals, plants, insects. The care of the vineyards is carried out in total absence of pesticides and chemical fertilisers, following the lunar phases. From pruning to harvesting, all work in the vineyard is done manually, to produce clusters from healthy vines that best express the territory of origin.

Vinification also occurs naturally and without the use of added yeasts, following lunar rhythms and favouring natural physical techniques over chemical ones in the processes. All this is done in respect of a product that is as alive, healthy, authentic, and natural as possible.

“Butterflies, birds, insects, poppies, and wildflowers are just some of the components, along with ourselves, of biodiversity,” says the owner, Renate Schütz, smiling, who has a degree in philosophy. “Biodiversity encompasses all living beings that inhabit the Earth and ensure the survival of life on Earth. It is a universal heritage for all humanity: therefore, preserving it must become our priority. Humans are also part of it and benefit from it in daily life.”

Organoleptic characteristics
With a beautiful appearance and intense ruby red colour, with violet hues, it has a vinous aroma, sometimes fruity; the taste is dry, full-bodied, pleasantly bitter.

Notes
For those who do not know it, this wine is a genuine surprise: its name can be misleading and lead the uninitiated to believe it is a dessert wine, because of “dolcetto”. In truth, the name was given in the Langhe, thinking more of the grape than of the wine; in fact, it has always been the table grape of our hills, offered in autumn, with seasonal pears and boiled chestnuts from the nearby Alpine valleys. Gianni Brera, historic journalist of Guerin Sportivo and La Repubblica, wrote to us about this in a letter from August 1979: “I have opened a few bottles of yours. The dolcetto enchanted me. It is very solid, serious, without swagger. A true barbarity justifies its name, albeit a suspicious one: your ancestors, ready before the full-bodied barbera, must have softened and called it by a diminutive: as Ercolino must have been for the Romans”

The Semplicemente red wine is a daily bottle of great rusticity, a calling card of Stefano Bellotti. Stefano Bellotti is one of the most influential figures in the world of artisanal wine, being a staunch supporter of a non-interventionist approach since time immemorial. A true pioneer of biodynamics, he has been cultivating local varieties such as Cortese, Dolcetto, and Barbera alongside some international grape varieties like Sauvignon and Gewurztraminer since 1984 in Novi Ligure. From an initial hectare to the current 22, with a single belief: to produce liquids that reflect the grape and the territory, without any compromise.

The Semplicemente Rosso wine is the most immediate expression among Stefano's reds, made from red grapes sourced from young vines, about 20 years old. The approach fully adheres to the principles of biodynamics, and after a manual harvest of the grapes, the process continues with destemming and maceration for about 30 days in stainless steel containers, with fermentation strictly occurring with indigenous yeasts. Malolactic fermentation always takes place in stainless steel containers with aging on fine lees lasting about 3 months. Light filtration before bottling and no addition of sulphur dioxide.

The Bellotti Semplicemente Vino Rosso presents itself in the glass with a ruby colour of great intensity, not very penetrable. Ruchè is a red grape variety with medium vegetative vigor and good productivity. The leaf is medium-small, trilobate and more rarely pentalobate, light green in colour and glabrous. The bunch is cylindrical-pyramidal in shape, elongated, compact and composed of medium-sized, sub-rounded berries that tend towards a violet colour, with a thick and very pruinose skin.
