Hidden pearl of the Côte de Sézanne, the estate of Marie Copinet, heir to the renowned Champagne producer Jacques Copinet. Today it is run by Marie-Laure along with her husband Alexandre. The vineyards, which span 9 hectares, consist of a blend of Chardonnay (45%), Pinot Noir (35%), and Pinot Meunier (20%). Marie-Laure's winemaking style is characterized by great simplicity and immediacy. The goal is to create wines that are an expression of the territory and the grape variety, without artifices or constraints. The result is a range of elegant and refined Champagnes, characterized by fruity aromas, freshness, and pleasant drinkability. Marie-Laure's innovative approach to winemaking has allowed her to secure a prominent place in the landscape of contemporary Champagne. Her wines are appreciated by critics and enthusiasts.

The Pinot Noir de Channes Nature Champagne by Pierre Brigandat originates in the heart of the CĂ´te des Bar, an area renowned for the Pinot Noir grape, which expresses unique character and finesse here. The Champagne Brut Premier represents the typical expression of the style of this historic house. A balanced and mature sip, where the different notes of minerality and structure from the various soils on which the vines are grown can be felt. A nose rich in yellow fruits, golden apple, and tropical fruit. With a subtle, delicate, fresh sip. The acidity accompanies the final length with remarkable persistence. This champagne is made from three different grapes (Pinot noir, Pinot Meunier, and Chardonnay) whose vineyards are located in the premier crus of Chamery, Vrigny, and Montagne Coulommes. The alcoholic fermentation lasts over 9 months and is carried out partly in steel and partly in oak barrels. Subsequently, the wine follows the normal vinification rules according to the Champenoise method. Reserve wine, from old historic vintages of the Maison, is added, and then the wine rests on its lees in the bottle for at least 48 months.

J. Laurens “Le Moulin Brut” Blanquette de Limoux AOP, Le Moulin Brut from Domaine J. Laurens is a Blanquette de Limoux AOP Brut sparkling wine, a traditional method wine from southern France, produced in the historic Limoux area of Languedoc. It is a fresh, dry (Brut) and very aromatic sparkling wine, characterized by great drinkability and an elegant yet simple style, designed especially for aperitif.
On the nose and palate, the main notes are:
green apple, white flowers (acacia, linden), apricot
light citrus notes and sometimes a hint of bread/brioche (from aging on the lees)
Blanquette de Limoux AOP is a Brut traditional method sparkling wine made from grape varieties, 90% Mauzac
10% Chardonnay and Originel. It is produced through a second fermentation in the bottle (traditional method) with aging on the lees
The sparkling wine is dry, fresh, light and fruity, with a bright straw-yellow color, fine and persistent; on the palate it is fresh, silky and balanced, and leaves a clean finish, slightly fruity and floral.

Domaine des Sablonnières – Protected Designation of Origin Saumur (AOP Saumur) is a wine produced in the Loire Valley, France, by an organic winery located between the Anjou and Saumur areas. The estate mainly cultivates typical Loire grape varieties such as Chenin Blanc and Cabernet Franc, on soils rich in limestone, flint, schist, and clay. AOP Saumur (Protected Designation of Origin), Loire Valley, France, with certified organic production. For the Saumur Blanc version, the main grape variety is generally Chenin Blanc, one of the Loire’s most prestigious varieties. Domaine des Sablonnières covers about 19 hectares and has produced exclusively organic wines since 2013. The estate’s location on a particular geological fault between the Paris Basin and the Armorican Massif gives the wines a marked territorial identity and a pleasant mineral character.

The wine has a bright straw-yellow color with golden highlights in more evolved vintages. The main aromas are white flowers, citrus fruits such as lemon and grapefruit, green apple and pear, and mineral notes, sometimes with hints of honey as it ages. The taste on the palate is fresh and lively, with good acidity, a medium body, a long mineral finish, and an elegant balance between fruit and savoriness.

Alcohol content: 12.5% vol.
Serving temperature is 8-10 °C for the white version.
