CASTELLO DI STEFANAGO- Classic method brut blanc de blancs sparkling wine "Ancestrale" (Bubbles)
The fermentations occur spontaneously using only indigenous yeasts and without temperature control. The base wines of chardonnay and riesling age separately and after blending, the second fermentation in the bottle occurs spontaneously due to the presence of yeasts and residual sugars. After 24 months of resting in the cellar, disgorgement is carried out and the bottles are topped up with the same wine.
On the nose, it opens with scents of orange blossom, white flowers, citrus aromas, yellow fruit, acacia honey, and bread crust.
The attack on the palate is rich and broad with dense and satisfying fruit that extends towards a finish of beautiful mineral freshness.

What characterises this wine the most is its pleasantness. Fresh, floral, harmonious, delicately aromatic and slightly soft. Easy to drink, versatile yet with character. It pairs well with delicate cuisine, fish and shellfish dishes, but also with spicy dishes.

THE CHALLENGE OF TESTARDI WINES - 100% Procanico.
The grapes for Desko come from a young vineyard managed under organic farming. Procanico is a local biotype of Trebbiano characterised by small-sized clusters and small berries that turn a deep pink during full phenolic ripeness. The vineyard belongs to the Cru of Poggio Cava, within the archaeological park “Città del Tufo”.
A fresh and pleasant wine for any meal.

ANDREA OCCHIPINTI- 100% Aleatico.
Alter Alea is a white wine produced with whole cluster pressing and spontaneous fermentation using only indigenous yeasts in small cement barrels, without the use of chemical additives and oenological aids. It ages for six months in steel and for two months in bottle.
Alter Alea has intense aromas and a light colour. Notes of acacia and resin are combined with the sharp notes of hawthorn. Excellent progression on the palate, where freshness and delicacy come together.

Castello di Stefanago- 100% Uva rara
Simple and easy-drinking red wine. Excellent acidity makes it enjoyable as an aperitif and with any meal.

THE CHALLENGE - STUBBORN WINES - 80% Sangiovese, 20% Ciliegiolo and Aleatico
The grapes of the Vigna Manent come from the company's largest vineyard, located precisely at the natural boundary between the tuff terrain of the Tuscia Maremma and the slopes of Mount Amiata, represented by the Fiora River. A wine with fresh and crunchy fruit, versatile in food pairing and easy to drink.
