VSQ Pinot Nero bianco Metodo Classico. Produced from Pinot Noir vineyards located in the municipalities of San Damiano al Colle and Montù Beccaria. The vineyards are situated on sun-exposed hills at an altitude of 300 metres above sea level. It has a yellow colour with a coppery rim, the nose is intense with hints of peach, balsamic herbs, and star anise. On the palate, it is balanced with good acidity, sapidity, and persistence.

CASTELLO DI STEFANAGO- Classic method 100% Pinot Noir.
The fermentations occur spontaneously, using only indigenous yeasts and without temperature control. The base wines undergo a spontaneous second fermentation in the bottle due to the presence of yeasts and residual sugars. After 24 months of resting in the cellar, the bottles are disgorged and topped up with the same wine, without the addition of sugar. Characterised by floral aromas, rich and ripe notes of small berries, and hints of bread crust. On the palate, it has good structure, with juicy and deep fruit, pleasantly ripe and well balanced by a lively freshness.

Noelia Ricci- Trebbiano di Romagna Doc.
The Trebbiano di Romagna Bro' by Noelia Ricci is produced in San Cristoforo di Predappio, at about 200 metres above sea level, in the heart of the Romagna hinterland. Fermentation and maturation take place in steel to preserve the fresh characteristics of the grape, with a period on the lees to give substance to the sip. The nose is intense with hints of fruit and yellow flowers, with pleasant citrus notes on the finish. The sip is savoury and smooth, with a persistent finish and slight bitter notes that refresh the palate.

CASTELLO DI STEFANAGO- 100% Bronner.
The grape is Bronner, which is part of the PIWI or resistant grape family, meaning these vines do not require treatments, not even copper and sulphur. Light contact with the skins, vinification in steel without filtration and without the addition of sulphur dioxide. Short aging in bottle. A wine with excellent acidity and a nice persistence.
The Talpaca “seeder of terroir” loves sandy and loamy soils with little clay presence. It is said that Bronner has noble relatives in Germany, around Freiburg. Riesling is considered its father. Bronner can be found in some regions of northern Italy, but in Oltrepò it is a grape cultivated only by Castello di Stefanago. Its colour is golden yellow. On the nose, it has intense aromas of honey, hay, and flint. An energetic and fresh white wine. With a fruity aftertaste, pleasant salinity, and spiciness that makes the tongue tingle. Evident hints of exotic fruits and golden apple.

CASCINA GASPARDA- Indigenous white grape varieties.
The white wine Vulp from Cascina Gasparda estate is vinified with indigenous white grape blends.
The vineyard plots have roots in a very varied terroir mainly composed of limestone, clays, and marls. The estate enjoys an exceptional microclimate favoured by the hilly slopes.
The grapes destined for the vinification of Vulp Bianco are hand-harvested and allowed to ferment spontaneously with only indigenous yeasts in fiberglass, without temperature control. The must macerates briefly on its own skins, for about 5 days, always in fiberglass to best acquire the aromas of the grapes that compose it. The wine then matures in fiberglass.
In appearance, it presents a bright yellow colour with greenish hues. On the nose, the bouquet ranges from the scents of wild white flowers, wild herbs, citrus, and white fruits. On the palate, we find a fresh, genuine wine, with an extraordinary drinkability and an excellent nose-mouth correspondence.

This wine, made from the indigenous grape variety Grillo, is born among the rocky outcrops and the rapid temperature changes of the highlands of inland Sicily.
Aroma of extraordinary typicity expressed by cedar, plums and loquats, mimosa flowers, mallow with hints of field grass and dry hay. Rich in mineral notes. On the palate, a dense tartaric structure and a long savoury finish make it easy to drink. A long finish rich in varietal echoes.

Il Colombaio- Vernaccia di San Giminiano Docg.
The Vernaccia di San Gimignano “Selvabianca” from the Tuscan winery Il Colombaio Santa Chiara is the young and fresh version of this interesting indigenous grape variety. The only white DOCG in a land of great reds like Tuscany, Vernaccia expresses wines of great personality. It is a white of good structure, with intense and multifaceted aromas, enhanced in their varietal typicity by the choice to vinify exclusively using steel and cement, without contact with wood. This wine has a strong character and is pleasantly persistent.
The “Selvabianca” wine from Il Colombaio Santa Chiara is made from a soft pressing of whole bunches of grapes, followed by fermentation at controlled temperature in cement and stainless steel tanks. The wine then rests on its own lees for several months before being bottled. In the glass, it presents a pale straw yellow colour, with slight greenish reflections. On the nose, it emanates delicate scents of wildflowers, fragrant citrus aromas, lime, white-fleshed fruit aromas, nuances of aromatic herbs, and chamomile. On the palate, it expresses an elegant taste, with a tense and savoury sip, which vibrantly extends towards a finish of great mineral freshness.

T1 is read as T with 1, like a function at the first time.
Like the grape variety in its first expression, a white winemaking that does not mean banality but elegance, drinkability, character, freshness and the inevitable sapidity that characterises the production area. This wine is made from Procanico grapes harvested in the early hours of the morning, brought to the winery before lunch to ensure a product that is as intact as possible. The wine is clear, with a straw yellow colour and slight golden reflections. On the nose, it expresses notes of flint, floral and fruity. On the palate, it is dry, fresh and savoury.

Maeli- 100% Moscato giallo
Wine with a bright straw-yellow colour and golden hues, the nose reveals scents of orange blossoms, white rose, magnolia flowers, and elderflower, along with citrus aromas such as lemon, cedar, and mandarin, and fruits like yellow peach, apricot, and melon, finishing with delicate hints of aromatic herbs like sage and mint, and memories of candied citrus and dehydrated yellow fruits. The taste is clean and crisp, supported by pleasant acidity leading to a savoury and persistent finish.

Pure Moscato Giallo from the vineyards in the Terre Bianche del Pirio in Luvigliano di Torreglia, facing east on soils of trachytic clays and white limestones from 50 to about 250 metres above sea level, cultivated in accordance with the principles of organic farming. Manual harvest in the first decade of September, soft pressing and cold maceration on the skins for one to three days depending on the batches of grapes, followed by static sedimentation and fermentation with indigenous yeasts. Ageing on fine lees for 18 months in steel before bottling.

We are in Tufo where until the 1970s and for over a century, the ancient sulphur mines, belonging to the Di Marzo family, were located, a great economic resource for the entire area. Torrefavale is an elegant wine of great finesse. Fresh, savoury, mineral, citrusy and with a tiny toasted note.

Li sureddi bianco (White Wine)

ANTICHI VIGNETI MANCA- Vermentino and Girò bianco.
“Li sureddi” bianco is a blend of 80/90% Vermentino and Girò bianco in a proportion that varies from 10 to 20% depending on the vintage. There are various types of Vermentino. The one used in this wine is a clone that has always existed in Romangia, characterised by large, compact grapes and a much sweeter and fruitier organoleptic profile. The Girò bianco, on the other hand, is an ancient indigenous Sardinian grape variety, now almost extinct, recognisable by its winged bunch and golden grape, with thick skin and an unmistakable aromatic hint. “Li sureddi” bianco is the result of a rigorous selection of the best white grapes from the estate, coming from vines with an average age of around 50 years.
It is a broad wine with great persistence, characterised by a salty note that slowly gives way to a long balsamic trail, accompanied by aromatic herbs typical of Romangia.
