Tasting description

The tasting begins with a small portion for each diner of Chianina IGP tartare, served plain.
It continues with a shared tasting of 24–36 month aged Cinta Senese IGP, raised in the Val di Chiana.
The experience concludes with a 1.2 kg Scottona Florentine steak, served to share, accompanied by a bottle of Tuscan Chianti Riserva DOCG organic wine “Ser Mariotto,” a locally sourced wine carefully selected to enhance its structure and intensity.

Included: all the courses described below, cover charge, and water (1 bottle).

Chianti Riserva Ser Mariotto DOCG Organic 2019

14.5% ABV. Grapes: Sangiovese, Cabernet Sauvignon.
A tribute to Ser Mariotto Cofani, a nobleman from Arezzo in the 1400s, whose portrait is kept in the Museum of the Palazzo di Fraternita in Arezzo.
Ruby red color tending towards garnet. On the nose, it is complex and intense with notes of cherry and geranium.

Reserve - Cinta Senese PGI

24–36 month aged Cinta Senese IGP cured prosciutto, made from pigs raised in semi-wild conditions in the Val di Chiana and fed on natural local forage.
On the palate, it is sweet and lingering, with balanced savoriness and a deep aromatic character that reflects the authenticity of Tuscan tradition.

Premium selected cut of young female beef, a more marbled and flavorful meat, aged up to 30 days to enhance aroma and tenderness. Grilled rare, then rested, to seal in the juices and flavors. Tuscan tradition, contemporary elegance.
