Main Characteristics Grape Varieties: Made from Chardonnay and Pinot Noir in equal parts.
Ageing: Rests on the lees for a full 42 months (around 3 and a half years).
Production: The process is entirely artisanal and takes place within historic natural caves of Etruscan origin, at a constant temperature of 13°C, where riddling and disgorgement are carried out strictly by hand.
Sensory profile: The palate is dominated by a deep mineral strength and savouriness, bestowed by a Pliocene soil rich in shells and marine fossils dating back 3 million years. On the nose, notes of hazelnut, bread crust, citrus fruits and balsamic hints emerge.
Alcohol content: Generally stands at 12.5% ABV.
PALAZZONE METODO CLASSICO DOSAGGIO ZERO MILLESIMATO 2020

Key characteristics Grape blend: A unique blend made up of 70% Verdello (a native grape variety from the Orvieto area that guarantees excellent natural acidity) and 30% Chardonnay.
Terroir: The vineyards are located at around 350 metres above sea level, cultivated on volcanic and tuffaceous soils, a feature that gives the sparkling wine a marked savoury character.
Vinification and ageing: The first fermentation takes place in stainless steel at a controlled temperature, followed by maturation on fine lees for around 6 months before tirage. The second fermentation takes place in bottle according to the Traditional Method.Style (Zero Dosage): At disgorgement, no dosage syrup (liqueur d'expédition) is added. The residual sugar is therefore nil or less than 3 g/l, leaving the wine completely dry, pure and faithful to the characteristics of the soil.

Composition: Mainly Chardonnay (80%) and Pinot Noir (20%).
Vinification: Fermentation takes place partly in temperature-controlled stainless steel tanks and partly in small wooden barrels (tonneaux or barriques).
Ageing: It rests in bottle on the lees for a minimum of 21 months.
Sensory Profile: Golden yellow with fine bubbles. On the nose it shows notes of ripe fruit, citrus and bread crust. On the palate it is creamy, distinctly savoury and persistent.
Residual Sugar: Around 4-6 g/L, placing it perfectly in the dry, linear Brut style.

Blend: 80% Chardonnay and 20% Pinot Noir (from vineyards at around 720 metres above sea level).
Vinification: Spontaneous fermentation with only indigenous yeasts in stainless steel and no temperature control.
Ageing: Secondary fermentation and bottle ageing on the lees for around 24 months.
Appearance and Taste: Cloudy straw-yellow colour, lively bubbles; on the nose notes of bread crust and flowers, on the palate fresh, savoury and mineral.
