Chef’s mixed vegetables in batter

Vegetable mix in three layers flavoured with miso and seaweed crisps.

Mango, papaya, cucumber and avocado carpaccio served with blueberries and mango coulis. Fruit and vegetables may vary according to seasonal availability.

Tuna filling with silken tofu and lime, served with nori seaweed.

Filled with spicy shredded shiitake mushrooms.

Trapanese bao:
- Trapanese pesto
- sea-flavoured tempura aubergine
- crudités

Spicy mango bao:
- seitan strips
- mango
- sweet and sour mango sauce

Edamame bao:
- edamame
- tofu and miso
- teriyaki and sesame seeds
