Production Area: hills of Trento, altitude 200 – 300 m.
Grape Variety: Pure Chardonnay
Vinification and Aging: the grapes are hand-picked around the first decade of September; gentle pressing yields a fragrant must that undergoes static decantation. Fermentation takes place at a controlled temperature in stainless steel. The following spring, the base wine is ready for bottling. The refermentation occurs inside the bottles, and the wine will remain in contact with the yeast for at least 24 months.
Alcohol Content: 12.5% vol.
