Beef in oil is a traditional main course from the Franciacorta hinterland, particularly from the Municipality of Rovato. An ancient recipe from the humble cuisine that, however, still represents the area and is much loved. The secret to preparing perfect beef in oil is to choose quality ingredients: the key element for obtaining a tasty dish is the so-called "cappello del prete", tender beef that is browned in a rich sauté and then cooked for a long time in water and oil. The result is a triumph of flavours that makes this exquisite recipe one of the most emblematic of Franciacorta's typical cuisine.

The ossobuco with peas is a tasty main course, inspired by the classic Milanese preparation, a symbolic recipe of Lombard cuisine. The ossobuco, here accompanied by a side of peas, is a fine cut of meat, taken from the bovine's tibia, including the bone (hence the name) and the marrow, which gives flavour and tenderness to the meat.
