Rovato-style beef with polenta

Beef in oil is a traditional main course from the Franciacorta hinterland, particularly from the Municipality of Rovato. An ancient recipe of simple cuisine that, however, still today is representative of the area and is much loved. The secret to preparing perfect beef in oil is to choose quality ingredients: the fundamental element for obtaining a tasty dish is the so-called "cap of the priest", tender beef that is browned in a rich sauté and then cooked for a long time in water and oil. The result is a burst of flavours that makes this exquisite recipe one of the most emblematic of traditional Franciacorta cuisine.

Selected cut, slow cooking in oil with herbs and anchovies according to the historic Brescia recipe. The meat becomes very tender and falls apart at the touch, coated with a velvety sauce that smells of tradition: a unique dish, that makes your mouth water just thinking about it.
