VINIFICATION

Controlled fermentation in stainless steel tanks at 25/28 °C, followed by malolactic fermentation. Punch-downs and frequent pump-overs in the early stages. A small percentage is then aged in French oak barriques.

SENSORY CHARACTERISTICS

Ruby red with violet highlights, fruity with notes of plum and cherry, pleasantly spicy, dry, harmonious, and suited to aging.

SUGGESTED PAIRINGS

Pairs well with roasts or stewed meats, as well as not-too-spicy, medium-aged cheeses.

Ricci Curbastro- Santella del Gröm

Grapes: The percentages are approximately: Merlot 30%, Cabernet Franc 25%, Cabernet Sauvignon 20%, Carmenère 15%, Barbera 10%
Vineyards: Vigna Santella del Gröm
Production process: cold maceration for about 4 days followed by fermentation at controlled temperature in large open steel vats. This is followed by aging for at least 18 months in oak barrels before bottling and then further aging for at least another year.
Color: deep ruby red, clear, consistent.
Aroma: intense, extremely refined and harmonious, with hints of wood and ripe fruit.
Taste: smooth, full-bodied and silky with a gentle contribution from the Cabernet; on the palate it shows finesse and a lingering flavor, with noticeable acidity well balanced by softness.
Alcohol content: 13% vol.
Bottle storage: in a dry, cool place, preferably lying down.
Aging: depending on the vintage, up to more than 10 years from the harvest.
Serving: at room temperature, around 18°C, in large, rounded glasses filled only halfway to ensure the best development of flavor and aromas. Open the bottle at least one hour before serving.
Food pairing: goes excellently with red meats, stews, feathered and game meats, cured meats, and aged cheeses.

Vinification
Whole-cluster grapes are pressed with a pneumatic press at very gentle pressures. During vinification, the must is separated into two fractions: free-run must, which has the best quality characteristics and is used for the production of Franciacorta, and second-press must, which is not intended for bottling. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature between 16 and 18 °C. The base wine rests in tank until the spring following the harvest.

Tasting notes
Straw yellow in color. A wine with a very fresh character. On the nose it has distinct notes of white flowers, and on the palate it is highly savory.

Ricci Curbastro Franciacorta - Saten Brut

Grapes: 100% Chardonnay vinified in oak barrels.
Vineyards: Franciacorta (BS) in the municipalities of Capriolo and Iseo.
Production cycle: after fermentation in oak barrels, in spring, the bottling takes place with the start of a slow refermentation in the bottle according to the traditional Franciacorta method. The bottles remain stacked for at least 40 months (total from harvest 48 months) ensuring the unmistakable bouquet due to the contact and autolysis of the yeasts. After disgorgement, with the addition of a very dry dosage syrup (4 g/liter), the Franciacorta undergoes further aging in the cellar for a few months.
Color: straw yellow, clear and bright.
Aroma: on the nose, it presents a significant presence of mature, dense, and rich fruity notes, complemented by spicy aromas and yeasts reminiscent of biscuit and almond notes.
Taste: of great elegance, it reproduces the same olfactory sensations on the palate, supported by body and structure, enlivened by a slight acidity.
Alcohol content: 12.5% vol.
Bottle storage: laid down, in the dark, in a dry and cool environment.
Serving: serve at 10° C, preferably in a bucket with water and ice.
Gastronomy: accompanies the entire meal, from aperitif to cheese; ideal with fish and white meats.
Curiosity: the Satèn type reserved only for Franciacorta is named after silk, once produced here, and like silk, it is “soft” (round) and “with fabric” (consistent or full-bodied), the two adjectives describe all the magic of Franciacorta Satèn Brut.

Mel4 - Sidro di mele

RIFERMENTAZIONE IN BOTTIGLIA

Conosciuto fin dal 600 a.C. ha avuto nelle aree popolate dai Celti il suo maggior sviluppo ed ancora oggi i maggiori produttori e consumatori sono l’Inghilterra, l’Irlanda il nord ovest della Francia con Normandia e Bretagna. Tuttavia anche Spagna e Italia insieme a Svizzera, Austria e Germania vantano tradizioni di produzione del sidro.
Le varietà di mele impiegate per la produzione del sidro non sono le classiche varietà da tavola ma assomigliano alla mela selvatica: meno dolce, ricca di tannini e con una buona acidità.
Le nostre mele sono 4 varietà di origine normanna: Douce Moën, Marie Menard, Perit Jaune e St.Martin. Sono coltivate a Brisighella in Romagna ad un’altitudine di 400 m slm.
Raccolte rigorosamente a mano, dopo circa una settimana le mele vengono lavate e triturate e la purea ottenuta viene pressata in un vecchio torchio.
Il succo ottenuto viene raffreddato, chiarificato per decantazione e quindi fermentato a temperatura controllata in vasca d’acciaio. Si ottiene così un sidro della gradazione di circa 8% vol.
Dopo alcuni mesi in cantina il sidro viene imbottigliato con aggiunta di lieviti (Sacharomyces cerevisiae) e zucchero per una seconda fermentazione naturale in bottiglia che garantisce anche la presa di spuma, 9-12 mesi di maturazione sui lieviti e con la sboccatura si estraggono i lieviti e di aggiunge lo sciroppo di dosaggio (Dry, ovvero circa 30 G/litro).

Colore: giallo paglierino con un fine ed elegante perlage.
Bouquet: elegante, fresco e fruttato.
Gusto: richiama il profumo delle mele, piacevolmente equilibrata la nota acida che mitiga il residuo zuccherino, aromatico, fruttato, fine e persistente come il suo delicato perlage.
Temperatura di servizio: 8-10 °C.
Abbinamenti: da bere giovane come aperitivo, in estate può essere servito con del ghiaccio, anche miscelato in vari cocktail come Spritz e Kir. A pranzo accompagna le uova, pizze, frutti di mare e carni grasse, si accompagna bene anche ai dolci lievitati
