Homemade shortcrust pastry served with chocolate and orange mousse

The seadas from Pastificio Artigianale Logudoro (based in Uri, SS) are handcrafted with traditional Sardinian ingredients. The dough (“pasta violata”) is made with durum wheat semolina, lard, water, and salt. The filling is a heart of fresh cow’s milk cheese or pecorino, flavored with lemon zest.
