Kyoto Dry Gin
Created with Japanese botanicals such as yellow yuzu from the north of Kyoto Prefecture, akamatsu wood chips (Japanese red pine), bamboo, gyokuro tea from the Uji region and green sansh? (Japanese peppercorn) berries. Bottled at 45.7% abv, KI NO BI uses a rice spirit base and pure ground water sourced from the famous sake-brewing district of Fushimi.

Old Tom
The “Old Tom” style of gin dates back to the 18th century, when the addition of sugar gave balance to some of the harsher spirits of the time. Uncertainty surrounds the origins of the name, but the image of a tomcat was common on barrels and pub signs.

KI NO TEA is a product created in collaboration with tea-grower and blender Hori-Shichimeien, founded in the Meiji era in 1879 and based in the famous Uji region to the south of Kyoto city. A number of super-premium Uji teas have been specially selected to form the heart of KI NO TEA.
Tencha and gyokuro provide intense aromas and depth of flavour with a wonderful sweetness that occurs naturally in the distillation of these superior teas. These teas are blended carefully with a secret botanical recipe used only in KI NO TEA.

KI NO BI SEI is made according to the same intricate production method as the original KI NO BI, using 11 botanicals distilled in six distinct flavour categories, known as the 6 Elements. The final blend has been recalibrated by our distilling team to bring out the best of each botanical at the higher strength. This bottling is at the traditional Royal Navy strength of 54.5%.

Ki No Tea - Limited Edition

Aroma: subtle notes of juniper, citrus, white chocolate and green tea.
Taste: slightly sweet notes of milk chocolate in balance with spicy juniper, floral nuances and tea notes.
Finish: long, refreshing and very clean.
Launched in 2017, KI NO TEA Gin is produced at Kyoto Distillery in collaboration with tea producer and tea blender Hori-Shichimeien in the Japanese metropolis of the same name, based on rice.

The third in a series of TIBS bottlings, this inaugural liqueur release from The Kyoto Distillery is based upon the traditional Sloe Gin style. Kyoto-grown Ume and Haskap berries from Hokkaido are macerated separately, the former for several months, in a specially formulated version of our dry gin, before being sweetened with sugar derived from Hokkaido beet. Our Base Element is also added to the blend to ensure the optimum balance of flavours.

Limited bottling to celebrate the 5th anniversary of Ki No Bi.
The name uses the Japanese for five ‘Go’ and the message 5th Anniversary is embossed into the label (???).
Made from a rice spirit, complemented by the addition of regional botanicals including yuzu, ginger and gyokuro tea from Uji, modified with Japanese red pine (‘akamatsu’) in the base element in place of hinoki.

Edition K is matured in American oak barrels previously used for Kilchoman’s single malt whiskies, and is carefully monitored by the distillery team to ensure that the influence of smoke and peat are in perfect harmony with the original botanical blend.

KI NOH BI is a cask-aged version of our classic KI NO BI Kyoto Dry Gin. Filled into cask at a high strength, the gin is carefully monitored by our distilling team during the maturation process to ensure the optimum balance between botanical flavours and influence from the wood. The team reviews the final liquid and blends with Fushimi water.
KI NOH BI Edition 23 is a rich and fruity sherry blend of sherry and mizunara cask. It has notes of prune, apricot jam and pistachio nougat on the nose with light herbal bay-leaf and spicy black pepper undertones.

Ki No Bi - House of Ki No Bi 2nd Version

This special bottling is only available at the Kyoto Distillery in Japan. The number of bottles produced is also limited. A Classic Ki No Bi Gin was bottled, but it only has 43% instead of 45%.

Kyrö x Ki No Bi è un gin ispirato all’armonia della natura giapponese e finlandese, per la quale entrambe le distillerie hanno selezionato il meglio delle loro botaniche locali e poi hanno sposato i sapori.
Al naso offre note di limone yuzu, foglie di ribes nero, alghe e lamponi. Al palato offre sentori agrumati e pepati.
