Tequila and mezcal are distilled spirits obtained in Mexico from agave, or from agave and sugar cane, through distillation.
There are two types of tequila: tequila produced entirely from blue agave (100% agave) and mixto tequila, which contains at least 51% sugar derived from agave and 49% usually from sugar cane or corn. The flavors of tequila can include fruity, herbal, and root notes. Mezcal often has a smoky flavor as well. Aging in oak barrels can add spicy and peppery flavors to the drink.
The main difference between tequila and mezcal is the production method. Traditionally, tequila has little flavor due to the steaming of the agave, while mezcal has a smoky flavor due to the cooking method, which involves roasting the agave in a pit.
Usage
Tequila and mezcal are enjoyed in aroma glasses as they are or with ice. Sometimes tequila is enjoyed with salt and lemon or lime.
