Tequila and mezcal are distilled spirits obtained in Mexico from agave, or from agave and sugar cane, through distillation.
There are two types of tequila: tequila produced entirely from blue agave (100% agave) and mixto tequila, which contains at least 51% sugar derived from agave and 49% usually from sugar cane or corn. The flavours of tequila can include fruity, herbal, and root notes. Mezcal often has a smoky flavour as well. Aging in oak barrels can add spicy and peppery flavours to the drink.
The main difference between tequila and mezcal is the production method. Traditionally, tequila has little flavour due to the steaming of the agave, while mezcal has a smoky flavour due to the cooking method, which involves roasting the agave in a pit.
Usage
Tequila and mezcal are enjoyed in aroma glasses as they are or with ice. Sometimes tequila is enjoyed with salt and lemon or lime. Tequila is also the ingredient in many classic drinks, such as Tequila Sunrise and Margarita. Mezcal can also be tried in cocktails as a substitute for tequila.
