AGING: Takes place in vitrified cement tanks for 2-3 months.
PAIRING: Castel Del Monte Pungirosa Rivera is recommended to accompany appetizers, spaghetti with tomato, fish dishes, and light white meats.
SERVING TEMPERATURE: Serve between 12 and 14 degrees.

The Rosamora rosé wine by Paolo Leo is produced in vineyards located in Salento, in the provinces of Brindisi and Lecce.
It is made exclusively from Malvasia Nera grapes, which undergo cryomaceration. It is then left to rest for about 4 hours in the press to achieve the desired pink colour. The fermentation lasts about 10 days and takes place in temperature-controlled steel tanks, followed by a maturation of 3 months in the same containers.
It is characterised by a cerasuolo pink colour. On the nose, it opens with a bouquet of raspberries, strawberries, and aromatic herbs. On the palate, it is fresh and crisp, with a decent persistence.
Perfect to accompany fried fish and sushi.

Rosé is a wine produced with specific techniques, starting from red grapes, in this case, Primitivo, from which a small amount of colour is extracted from the skins. The production of this type is evidenced by the traditions of many wine regions around the world, where rosé wine has always held its importance; one of these regions is Puglia, particularly Salento. From the precise fruity, sweet, and spicy taste of Primitivo comes a rosé that offers enviable versatility at the table and allows for extremely varied and interesting food and wine pairings.
PRODUCTION AREA: Sava – Manduria in the province of Taranto.
VARIETY: Primitivo - VINEYARDS: Alberello pugliese: - VINIFICATION: The harvest is carried out in the early hours of dawn. Crushing, brief cold maceration of 5-6 hours, and soft pressing. Fermentation at a controlled temperature of 15° - 16° C.
AGING: 3 months in steel and 2 months in bottle. - ANALYTICAL DATA: Alcohol 12.5%; total acidity 6.80 g/l; pH 3.32; residual sugars 6.40 g/l; total SO2 85 mg/l.
TASTING NOTES: Good intensity pink colour with violet reflections; fragrant aroma with hints of berries; round and harmonious taste.
